Anything cooked with Conecuh has got to be good!! When I cook collards, I use a generous dose of bacon grease along with a dash of baking soda,,,, the grease for flavor,,, the soda for gas afterwards.
Never cooked them that long though. Even at a simmer, my collards start toward the mush stage at about 30 minutes. What am I doing wrong?? I really like greens(with onions and pepper sauce on top) with a pork chop, sweet potato, corn bread, sweet tea. Followed by a fried cinnamon apple tart. Followed by good coffee. Followed by sex, a Lipitor pill, a final sip of wine, and,,,,
