Did this at the lake last weekend and it was a BIG hit with all my family and relatives. So decided to post and see what other great recipes may be lurking out there for this summer for all to enjoy.

Seafood Boil Recipe

Add per 8 quarts of water: (Seasonings)
· 1 1/3 oz of liquid shellfish boil
· 1 Beer
· 1 lemon, quartered
· Salt to taste
· Cayenne pepper to taste (a dash or two)

Ingredients per Person:
· 3 new potatoes (medium size)
· 1 small peeled sweet onion
· 1 ear of corn (cut into thirds or half depending on size)
· 1/4 pound Kielbasa or coneca sausage (cut into 3” pieces)
· 1/3 pound medium large shrimp (22-24 count per pound)
· 1/2 pound of Alaskan King crab legs
· 1 lobster tail per person
· Quart of drained and washed oysters

Cooking Directions:
· Fill large pot with enough water to cover all ingredients
· Add Seasonings above per 8 quarts of water
· Bring water to a boil for 5 minutes
· Turn heat down to Medium
· Add Potatoes – Cook until Potatoes are ½ done – About 12 to 15 minutes
· Add Sausage 5 minutes after Potatoes
· Add Onion, Corn and Crab – When Potatoes are ½ done. Cook until all vegetables are tender – About 10 minutes (If using frozen corn or precooked Alaskan King Crab legs add with Shrimp and Oysters)
· Turn off Heat – Add Shrimp and Oystesr. Cover pot and let sit for 5 to 10 minutes, till Shrimp is done
· Drain and serve immediately.
·
We served on several layers of brown craft paper and just poured the seafood boil in the middle of the table. Makes clean up simple, just roll up craft paper and throw in garbage bag.

Hushpuppy Recipe

· 1 cup flour
· 2 cups corn meal
· One egg
· Finely chopped onion to taste
· Add buttermilk till ingredients are consistency of thick paste.

Yours looks great. Going to print and take to the lake. I've had this - or something similar - and it was wonderful. I make a gumbo that is similar to these ingredients, BUT the rioux takes about 3 hours...or something...and the entire process is about a 7 hour one but it serves 22. This looks better.

How many does yours serve, Mav?

Jawja, be careful if you put a gallon of oysters per person.

Make that "quart" per person.

I think you meant 3 pounds of potatoes,... right?

I do this also, with shrimp, potaoes, corn, spicy sausage and sometimes crawfish.
I use for seasoning a small bottle of liquid shrimp boil, a couple of fist fulls of Louisiana shrimp and crawfish boil (it's red, bagless) and a small bottle of Tabasco sause. It's very spicy and not for the wussies.

Okay,....okay,......I'm hungry,....is it summer yet?????

Here is one I tried for the first time today. I certainly found it simple enough and quick enough to prepare. Also, found it to be a terrific meal. I used a full tsp of cayene which certainly left it spicey. Might go with 3/4 tsp next time. The mango was so good I might even add another mango. Beautiful dish visually when served. My wife thinks this one is a keeper and is right up there with shrimp and grits.

Just click on the link below and give it a try.

Actually it is a quart total, based on 4 people. A quart of oysters depending on size is usualy about 24.

Better yet, I like Cokman's gallon idea, as you know the old saying about Oysters and after being married for 20 years I need all the help I can get with my wife.

JAWS - The ingredients are per person, other than the oysters.

Also the new potatoes are 3 per person, not three pounds. Could be 3 lbs if you have about 8 people.
