Not until the post below have I ever known how to cook good ribs. Yesterday, we cooked ribs and pork chops. I used a rub mentioned, and I think that was 50% of the battle. The taste from the rub turned those chops into perfection!!! The rub was 3/4 cups sugar, 1/4 cup salt, 1 1/2 tsps cummin, 1 tbls red pepper, 2 tsps paprika, 2 tsps celery salt, (which I think should have been ground celery seed instead). I rubbed this on the ribs and the chops, let marinate and then smoked on the grill as suggested. The chops were put on in the last 15 minutes and cooked pretty fast, they were thin. I then coated the chops with some Carolina Honey sauce from tony romas, and we had those last night.. They were great!!!
Tonight we have the ribs, they are in the oven now getting there second cooking? or reheating as suggested with the sauce applied. Already smelling great. From the sample taste of them I had last night, they are going to be delicious. Trying to keep the beer quantities to a minimum so I'll truly enjoy them tonight.
Thanks for the grilling tips on ribs in the earlier post. Finally I can cook some good ribs! These were St. Louis cut ribs?
This morning on the early show they showed Brown sugar as an ingredient for a rub, i'll give that a shot next time.
