My son is attending Campus Outreach Mountain Project this summer. There are approximately 90 college kids working at Dollywood and doing Bible study and evangelism training. They are living in hotels, 4 or 5 to a room. They have asked me to cook BBQ, baked beans, and slaw for a meal for all of them. I have little experience knowing how much food to plan for with a large group. There are about 35 women and 55 men. They want to stay around $3 per person which should be doable. How much Q, beans and slaw should I plan for per person?  Thanks!!

Questions?? Are they accustomed to meals in campus cafeterias/boarding house or do they cook their own meals? Lunch or dinner meal? What will they be drinking? Beer or tea/soft drinks? By "Q" you mean butts? All these make a difference in quantity.

Mack, Yes butts. They, for the most part live off campus during the school year and either cook their own meals or go out to eat. By the time we feed them Sunday lunch on July 29, they will have been in Pigeon Forge/Gatlinburg for two months surviving on Dollywood concession food or whatever they can cook in their rooms in microwaves. They will be drinking water, tea, or soft drinks. I want them to have plenty, but not lots of leftovers either.

If I were doing it, I'd figure between 1-1.5 pounds of raw meat per person depending on the fat content and bone size; there will probably be leftovers, but that's a good excuse for a big pot of Brunswick stew. As for slaw and beans, I'd figure close to 8oz each per person, but you will probably get by easily with 4-6 per person....it all depends on how hungry those kids are when they show up at the table and I like to over-plan. First, my regards on accepting that challenge. Ain't easy to feed that many folks.
Agree with McGill for the most part on serving sizes. After two months of concession food/microfood, all bets are off, though. They are gonna' be hungry for the good stuff.
In our experience serving Q, a single butt will serve 7 or 8 adults with leftovers. But there was beer involved and lots of side dishes,,, and the guests were not 20 year olds. Me, I would shoot at @ 12 butts. Less if served on a bun. Assuming a Sam's butt of maybe 6/7 pounds.

THANKS UEM and Mack!! These guidelines will help tremendously. I will be going up to visit this weekend and get a better idea of whether I'm feeding the football team type, or the cheerleader, picky eater type. I also will be cooking for a cancer fund raiser dinner cruise with up to 100 people in mid-July, and possibly a wedding with up to 200 in August. Cooking is fun for me and since it's a hobby I can do it for cost and save friends some money. I appreciate all the input and tips I get on this forum. Even though I'm not on lake Martin you guys have been a world of help over the past few years. Perhaps some day we can get together and swap lies over a cold one. :-)

Well, the time has come. I have 45 pounds of pulled pork ready to go. We will be taking 4 of the large cans of beans with the extras, onions, brown sugar, ketchup, mustard, and molasses, and some bacon, for baked beans. Our other side will be small individual bags of potato chips. We're taking 120 hamburger buns for the pork,  and 120 cupcakes for desert. Drinks will be sweet tea, unsweetened tea and water. Including plates, cups, napkins, forks, etc, we will be right at the $3 per person goal. Thanks for all the help and advice!  BTY, the cancer fundraiser cruise only had about 40 people show due to weather, but we raised over $3,000 for brain cancer research!! :-)

I finally made it up to CenterHill a few weeks back.... Might even been able to carouse with the BIG BOATS.... Put in at the old Holmes Creek ramp... (it sure is nice to have a parking spot now that they've moved the docks doen to the Rec. area.

Well, It's all over now. The 84 college students consumed 35 pounds of pulled pork, 60 buns, (most ate BBQ plain), 120 cupcakes, 100 individual bags of chips, 7 gallons of sweet tea, and 4 large cans of baked beans doctored with ketchup, mustard, bacon, onion, brown sugar and just enough smoked water to give them another layer of flavor.
