I received a (very nice ) gift of a Kamado Joe grill recently. I haven't used it yet but I remember a lot of Big Green Egg talk on here, so I plan to search for some recipes. I figure the KJ and BGE work similarly, so recipes / instructions will be roughly similar?

Yes, a very similar piece of equipment. It's more about the style of cooking/grilling/smoking than the recipe. Read up and give it a shot; if you're a grillin' man by nature, you're going to love it.

I grilled some pork chops last weekend and over cooked them. There was quite a bit of lump charboal left over and I have thought about taking them out of the grill to store them in an airtight container, but then thought that might be getting too obsessive. I have just read a lot about the necessity of keeping the lump charcoal dry. I think my next attempt will be to smoke a couple of chickens, I have some "chicken sitters" that I have used on my old smoker, they work pretty well to hold the chickens up.

I leave lump charcoal in both of my eggs and rarely have a problem with it keeping dry; I would'nt worry about it unless you think it will be a couple of months before you cook again. Just curious, does the Joe have a ceramic plate for placment between the coals and the meat for slow cooking?

yes, it has a ceramic plate that is split in two hemispheres so you can use either / neither / both. They call it the heat deflector. I couldn't tell if you're supposed to use this at all times or just for smoking. Here's a link to their instructional video page, they ahve recipes but they also break down the construction of the grill:

so far I have done pork chops (overcooked them), pizza (perfect and fun), 2 whole chickens (tough to get the temp low enough but once I did it was easy). It's been fun!
