If you like to know the "science" behind why one cooking technique works over another technique and want to know the best way to cook something, I highly recommend "Cook's Illustrated" Magazine. No advertising. Just articles that take take a topic -- try several ways of doing it, explains why the way recommended is the best. Also, when they review products or appliances, you get the straight scoop.

Great publication, their reviews are right on.  Another great source is Harold McGee's On Food and Cooking.
