I just finished vacuum packing 3 racks of ribs for the freezer. I'm trying something a little different this time. I cut them into 3 or 4 bones and on some of them put a little of the rub on them, then packeged individually. I'm ready to cook some now!!

Perfect. Good idea. I find Baby Backs on sale somewhere I stock up the freezer. Keep them as long as a year very well. Looking at buying some St. Louis cuts at Sprouts for $1.98 a pound for this summer. I am beyond ready. Freezing them in sections makes it easier to handle. Some will say that smoking ribs in 3 or 4 bone portions affects flavor??

That's a good idea. I don't see how smaller portions would impact flavor. If you are cooking big volumes then having them in one piece would reduce handling, but in smaller pieces you could arrange then to fit more on a grate. My only hesitation would be if they were sealed when I bought them. I would hate to unseal, portion, and then reseal. In that case I would portion as I was ready to cook. Would you cut out a bone to leave more meat on the pieces?

I do not normally cook 3 racks at once. Ribs at Big Box's like Sam's and Costco come in 3-paks in the same cryo sealed package, perfect for freezing whole. That is the problem. Vacuum packing a slab of ribs is trouble in a small scale kitchen.

The ribs at Sam's and Costco usually run about $2.49 a pound for a three-pak. Often here in Bham, WD runs baby backs at BOGO or about $2.50 single rack package. Been buying that. Sprout's right now has STL slabs for $1.88....
